Cocoa Powder I use unsweetened natural cocoa powder or Dutch-processed Cocoa powder. The Dutch-processed Cocoa Powder has a dark, rich flavor that I like.
Heavy cream – This ingredient will bring together the rum ball mixture when we bring it to a boil, along with sugar, butter, and cocoa powder. This ingredient also adds moisture to the cookies.
Pecans or walnuts – Pick what suits your budget and taste. They both work well in this recipe. To enhance the flavor, toasting them beforehand is a great idea.
Dried Fruitsthese can be added but are not required. They add a nice texture and touch.
Optional ingredient: I add a pitted cherry to the rum balls, usually preserved in sugar syrup. A walnut or almond is another excellent addition.

You may need to reroll rum balls using cocoa or powdered sugar. They tend to absorb moisture as they sit in the refrigerator.
Preheat the oven to 350F/180C and roast the nuts
Roast the walnuts for 8 minutes until they are fragrant and light brown. This can be done in a pan for a few moments to develop the flavor.
Allow the nuts to cool. Then, chop them finely with a knife or in a food processing machine. Could you place them in a big bowl?
Grind the cookies (Graham Crackers) in a food processor until they are fine crumbs.
Add the cookie crumbs and nuts together.
If you don’t have a food processor, put them in a plastic bag and crush them with a rolling pin or a glass bottle.

Bring butter, heavy cream, and powdered cocoa to a boil in a small saucepan. Do NOT simmer.
