Apricot galettes are simply free-from tarts – and these are the cheat’s version. Our easy-to-make galettes are so good for afternoon tea – serve warm with a dollop of cream and a hot pot of tea. Delicious!
MAKES 4 PREPARATION 10 mins COOKING 10 mins
Preheat oven to 220C / 200C fan. Line a baking tray with baking paper. Cut 1 ready-made puff pastry sheet into four squares. Score a 1cm border around each pastry square, taking care not to cut through. Spread inside border of each square with 2 tsp strawberry jam. Slice 8 canned apricot halves into wedges and arrange, slightly overlapping, on jam. Scatter over 1 tbsp flaked almonds. Bake for 8-10 mins, until pastry is puffed and golden. Serve with a ⅓ cup (80g) thick cream.
