Who doesn’t love a slice of apple pie – it’s the ultimate comfort food, right? You may be thinking that you can’t have your pie and eat it too, but I’m telling you that you can. This beautiful little French Apple Tart will have you going back for more and at only 760 kilojoules, you can! And did I mention that this includes ice-cream? It’s made with warm spiced apples baked on light fluffy filo pastry. Beautiful hot or cold, it’s pure comfort on a plate.

Sweet Treat: French Apple Tart

French Apple Tart

SERVES 6  PREPARATION 10 mins  COOKING 25 mins

Equipment

  • measuring cups
  • measuring spoons
  • juicer
  • vegetable peeler
  • chef’s knife
  • chopping board
  • baking tray
  • baking paper
  • small saucepan
  • wooden spoon

Ingredients

  • ¼ cup (80g) apricot jam
  • 2 tbsp brown sugar
  • 2 tsp butter
  • ½ tsp ground cinnamon
  • 1½ tbsp lemon juice
  • 6 sheets filo pastry
  • cooking oil spray
  • 2-3 granny smith apples, peeled, cored, thinly sliced
  • 1 cup low-fat vanilla ice-cream

Method

  1. Preheat oven to 180C and line a baking tray with baking paper.
  2. Place apricot jam, brown sugar, butter, cinnamon, lemon juice and 2 tbsp water in a small saucepan. Stir to combine and and bring to boil.  Remove from heat and allow to cool slightly.
  3. Spray each filo sheet with cooking oil spray and stack one on top of other, on prepared tray. Toss apple in jam mixture and arrange over filo stack, leaving 4-6cm border. Drizzle with any leftover jam mixture and curl up edges of pastry.  Bake for 25-30 mins, until golden and gorgeous. Serve with ice-cream.
