This bright, flavourful dessert is made with store-bought crushed biscuits, coconut, and fresh lemon juice.

How to make Lemon Slice
This recipe is quick and straightforward. Electric mixers are not necessary. It’s no bake. Start by using a spoon and a bowl.
You can use any plain, sweet cookie from a store.
If you don’t own a food processor (or, like me, have dropped your lid too many times), you can crush them with a rolling pin. It’s both practical and therapeutic.
You can add lemon zest and desiccated Coconut to the crushed cookies. Although you can use shredded or pulverized coconut, I prefer the finer crumbs of desiccated.
Pour over the melted butter and sweetened condensed Milk. I recommend using fresh lemon juice and full-fat sweetened condensed (I tested the recipe with Nestle Sweetened Condensed) milk for maximum flavor.
Stir everything well and place the mixture in a baking pan lined with parchment or baking paper. This will make it easier to remove later.
Use the back of the dessert spoon to press the slices down until they are tightly packed in one layer. Place in the refrigerator to set.
It’s as simple as 1-2-3 to make the icing. Add the milk, lemon juice, and sugar together. Remember to sift the icing sugar before using it so there are no lumps!
How to store lemon slices
Pour the mixture over your slice, and set it in the refrigerator. The piece will keep in the fridge for about three days if you can wait that long.

Lemon Slices are made quickly and easily with sweetened condensed Milk.
Ingredients
Lemon Coconut Base.
Breaking up Digestive Biscuits* 300 g (roughly three cups) with your hands.
One hundred grams (1 cup) of desiccated coconut.
One Lemon Zest.
Sixty grams (1/4 cup) of butter.
One cup sweetened condensed Milk 240.
2-3 tablespoons fresh lemon juice (roughly one lemon).
Lemon Icing
One hundred twenty-five grams (1 cup) icing sugar or powdered sugar, sifted.
One tablespoon of fresh lemon juice.
One tablespoon of milk.
Lemon zest to decorate.

Instructions
Line an 8-inch square pan using parchment or baking paper. Mix the broken biscuits in a food processor until they are fine crumbs. Pour biscuit crumbs into a large mixing bowl.
Stir in coconut and lemon zest. Microwave butter until smooth and melted.
Stir quickly after adding the butter, lemon juice, and sweetened condensed Milk to the biscuit mixture. Pour into the baking pan when the biscuit crumbs have been thoroughly coated. Use the back of a wooden spoon to press down and create an even layer.
Place the slice in the refrigerator for 1 hour before adding the lemon icing.
Sugar, lemon juice, and Milk are all you need to make the icing. Stir until smooth.
Put the cookie back in the refrigerator for another hour. Sprinkle with lemon zest before serving. Slices can be stored in the fridge.
